banilla pancakes (serves 4):
Ingredients:
100g / 4 oz plain flour
1 egg (lightly beaten)
300 ml ½ pint milk
butter for frying |
for the filling:
150ml double cream
1 tbsp icing sugar
1 x vanilla pod split and seeds scraped out
1 x sliced banana

Method
• To prepare the filling gently mix all the cream, vanilla seeds and sugar and set aside.
• Place the flour into a mixing bowl, add the egg and gradually half the milk, beating well
to make a smooth batter. Beat in the remaining milk until a smooth batter is achieved.
• Heat a knob of butter in the frying pan (I find a small frying pan works best) and cook
until underside is golden. Turn or toss (If you’re brave). Place on a plate, spread some
of the filing and banana slices onto one half then fold the other half on top. Drizzle
with golden syrup and enjoy.
vanilla custard
Ingredients:
200ml/7fl oz milk
200ml/7fl oz double cream
1 vanilla pod, split, seeds scraped out
75g/21/2oz caster sugar
2 free-range egg yolks

Method
• Place the milk, cream and the vanilla pod and seeds into
a saucepan. Bring gently to the boil, then remove from the heat and remove the vanilla pod.
• Whisk the sugar and egg yolks together in a large bowl until pale and frothy. Pour the egg
mixture over the milk and cream and whisk together. Pour the mixture into a clean saucepan
and whisk over a low heat until a thick custard is formed.
• To serve, pour into a jug.
